Ingredients of Handi Chicken Dum Biryani

  1. Take 400 gms. of chicken on bones, curry cut.
  2. Prepare to taste of salt.
  3. Take 1/2 tsp. of turmeric powder.
  4. Prepare 1 tbsp. of red chili powder.
  5. Make ready 1 tsp. of garam masala powder.
  6. Take 1/2 cup of yoghurt.
  7. Make ready 1/2 cup of coriander leaves, chopped (leave aside some for garnishing).
  8. You need 1/2 cup of mint leaves, chopped (leave aside some for garnishing).
  9. Make ready 1 tbsp. of ginger-garlic paste.
  10. Prepare 8-10 of whole peppercorns.
  11. It’s 2 of cinnamon stick.
  12. Make ready 3-4 of green cardamoms.
  13. Prepare 5-6 of cloves.
  14. Take 2 of star anise.
  15. Prepare 1 of mace.
  16. Take pinch of nutmeg powder.
  17. Take 1/2 cup of fried onion, (leave aside some for garnishing).
  18. Make ready pinch of saffron soaked in 1/4 cup milk.
  19. It’s 8-10 of fried cashewnuts.
  20. Take 3 tbsp. of ghee.
  21. Prepare 1 of clay pot.
  22. Prepare of Rice.
  23. Prepare 1 cup of Basmati rice, soaked for 30 minutes, washed and drained.
  24. Prepare 1 tsp. of salt.
  25. Take 2 of bay leaves.
  26. Prepare 1 of " cinnamon.
  27. Prepare 2-3 of green cardamoms.
  28. Prepare 4-5 of cloves.

Handi Chicken Dum Biryani step by step

  1. Marinate the chicken in all the above mentioned ingredients (except ghee, saffron and cashews) for 3-4 hours..
  2. To cook the rice bring sufficient water along with all the spices to a boil. Add the rice and mix well Cook for 3-4 minutes till half done..
  3. Drain and keep aside..
  4. Layer the handi with the marinated chicken first..
  5. Spread the rice, fried onions, coriander & mint leaves, cashews, ghee, saffron milk and the water in which it was boiled..
  6. Cover with a foil and cook on a high flame for 15 minutes. Then simmer on a low flame for 5 minutes. Let it remain covered for 15 minutes..
  7. Serve with raita and onion rings,.
