Easy! Delicious! Mapo Eggplant Recipe. Mapo Eggplant, or what we call Mabo Nasu (麻婆茄子) in Japan, is a delicious stir-fried eggplant dish with ground pork and seasoned with a bold savory sauce. It may remind you of Mapo Tofu, one of the most popular Sichuanese classics.

- You need 2 of Japanese eggplant.
- You need 120 grams of Ground pork.
- It’s 1/2 can of Carrot.
- Prepare 2 of Green bell peppers.
- Take 1 of Sesame oil.
- You need 1 dash of Grated garlic.
- It’s 1 dash of Grated ginger.
- You need 1 of Katakuriko slurry.
- Prepare of For the seasoning:.
- You need 1 1/2 tbsp of Tianmianjiang.
- You need 1 tsp of Soy sauce.
- Prepare 1 tsp of Chicken bone soup stock powder.
- It’s 100 ml of Water.
- Take 1 tsp of Doubanjiang (for a spicy kick).
Instead of the usual tofu, I used Chinese eggplants and TVP or textured vegetable protein instead of meat.You can also opt to use other plant-based ground meat substitutes or even diced mushrooms for this easy yet really savoury and tasty meal.Great recipe for Mapo Eggplant that Kids Love.There wasn't any sweet bean paste which I use in mapo left, so I used oyster sauce instead and it was delicious.

- Fry the bell peppers and carrots over high heat then remove from the pan once done..
- Similarly, fry the eggplant on high heat and then remove from the pan..
- Heat sesame oil in a pan and add garlic and ginger to add some flavor to the oil. Add the ground meat and fry..
- Add the seasoning ingredients (pre-mixed) and fry to let the meat soak in the taste of the seasoning well..
- Add the previously fried vegetables then add the katakuriko slurry to make the sauce a little bit thicker. Done..
