Ingredients of Dum Chicken Tangdi
- You need 2 of full chicken legs (thigh and drumstick).
- Make ready 2 tbsp of oil.
- It’s 1 of medium onion finely chopped.
- It’s 1-2 of green chillies finely chopped.
- It’s to taste of Chat masala.
- Make ready 3-4 of lemon Slices.
- Prepare of Marinade.
- You need 3 tbsp of curd.
- Take 2 tbsp of ginger garlic paste.
- It’s 2 tsp of red chilli powder.
- It’s 1 tbsp of cumin powder.
- Make ready 1 tbsp of coriander powder.
- Prepare to taste of Salt.
- Prepare of Garam masala (coarsely ground).
- It’s 5 of cloves.
- Prepare 5 of peppercorns.
- Prepare 1 inch of Cinnamon stick.
- Prepare 1 of star anise.
- It’s 1 of black cardamom.
- It’s 5 of green cardamoms.
Dum Chicken Tangdi instructions
- To prepare the marinade, mix the curd and the ginger garlic paste..
- Add in the salt, red chilli powder, cumin powder, coriander powder, and the coarsely ground garam masala. Mix well..
- Add the chicken legs and mix until they are well coated. Marinate them for at least two hours, preferably overnight..
- Before cooking, wipe off the marinade from the chicken. Do not throw away the marinade..
- Heat the oil in a pan. Add in finely chopped onions and green chillies. Saute. Just as it is about to change color, add in the chicken legs and sear them on high flame till they colorize..
- Add in the marinade with about half a cup of water. Cover it with a lid and put it on dum on low flame for 20 minutes. You can also use aluminium foil for it just beneath the lid..
- Once the chicken is cooked, dry off the excess water..
- Dum Chicken Tangdi is ready to serve. Sprinkle on a bit of chat masala and serve with lemon wedges..
