Ingredients of Rich's Eggs Masala

  1. It’s 1 teaspoon of rapeseed oil.
  2. Make ready 1 of small turmeric root, peeled & finely chopped.
  3. Make ready 1 teaspoon of cumin seeds.
  4. You need 1 of red onion, chopped.
  5. It’s 1 of red chilli, finely sliced.
  6. Take 1 of red pepper, chopped.
  7. Take 1 teaspoon of ground turmeric.
  8. You need 2 teaspoons of garam masala.
  9. Prepare 120 ml of hot water.
  10. Make ready 2 of free range eggs.
  11. Prepare 2 slices of bread.
  12. Take of fresh coriander, coarsely chopped.

Rich's Eggs Masala step by step

  1. Heat the rapeseed oil gently in a pan. Add the turmeric root along with the cumin seeds and fry on a low heat for 30 seconds. Then add the onion and fry for a further 2 minutes..
  2. Add the chilli and red pepper and cook for 2 minutes more, before adding the ground turmeric and garam masala, and stirring..
  3. Add the water, stir and bring the mixture to a simmer..
  4. Crack the eggs onto the top of the mixture and continue to simmer for 5-7 minutes (depending on how runny you like your eggs) and toast the bread..
  5. Finally, season with salt and pepper, scatter the coriander over and serve with the toast. Enjoy!.
