Ingredients of Chicken Dum Biryani
- You need of For gravy.
- Make ready 250 gm of chicken.
- Prepare 6-7 of big onions thinely sliced.
- Make ready 4-5 of tomatoes puried.
- Prepare 1 tsp of Biryani masala.
- It’s 1 tbsp of Onion garlic masala.
- Take 1 tsp of Red chilli powder.
- It’s 2 tsp of Ginger garlic paste.
- Make ready as needed of Oil for frying onion.
- Make ready 3 tbsp of Oil for gravy.
- It’s 100 gm of curd.
- Take to taste of Salt as per taste.
- It’s of For Rice.
- Take 250 gms of Long grain biryani rice.
- You need to taste of Salt.
- You need as needed of Oil.
- You need of Bay leaf 2-3.
- You need 1-2 of Green Cardamom.
- You need 1/2 inch of Cinnamon stick.
- It’s 1 tsp of Cumin seeds.
- Prepare as needed of Food colour optional.

- Marinate chicken with 1/2 tspoon turmeric powder and 1 Tspoon ginger garlic paste for half hr..
- Till then fry sliced onions till turning brown and keep them aside..
- And and oil in pot and put cumin seeds, cinnamon stick,bay leaf and cardamom then add water for cooking rice. Bring it to boil. Then add rice. Add colour if wanted. Drain rice after rice is 1/3rd cooked.
- Take a pan. Add some oil and add marinated chicken to it. Add salt as per paste. Let it cook for some time. After chicken got cooked, remove it in plate and in same pan add oil. To oil first add 3/4 of fried onion slices and ginger garlic paste. Let it saute well. Then add all powdered masala and tomato puri to it. Let it cook well. Then add chicken add curd. And mix well and keep on flame for 2 min..
- For layering take Pan Or pot. At base add all gravy. After gravy make a layer of rice. Then sprinkle fried onions and mint and coriander chopped. Then in tadka pan add some desi ghee and all whole spice. Immediately add this tadka all over the layer. Cover the pot with aluminium foil. Them put cover utensil on it. And keep on low flame for 10-15 mins more..
