Ingredients of Aubergine and Snail Sauce paired with Boiled Yam
- Take 4 of large snails, halved.
- It’s 6 of large tomatoes.
- Take 4 of habanero peppers.
- Take Half of a large onion.
- It’s 1 of Bell pepper.
- It’s Half of clove of garlic.
- You need Half of a large Aubergine, cubed.
- It’s of Vegetable oil.
- You need 3-4 slices of yam, with the skin left on.
Aubergine and Snail Sauce paired with Boiled Yam step by step
- Put sliced yams in a pot of water on heat to cook. Parboil snails for 8minutes. Chop up tomatoes, peppers, onions and garlic. In a small pot, add a cooking spoon of vegetable oil. Lightly fry onions and garlic till translucent then add in chopped tomatoes and peppers. Season with salt and bullion cubes to taste. Fry till oil starts showing, turn down heat and add snails. cook for 10 minutes then add chopped aubergine, Cook for another 10 minutes on low heat..
