Morog Polao instructions

  1. First cut the onions finely and fry to make the barista. Then the chicken. The chicken should be large pcs like tandoori, mainly leg and breast pcs. Wash and give silts to it. Now Marinate the chicken with whisk curd, salt and red Chile powder. Keep it for at least 1 hr..
  2. Now in a pan add ghee, then add the bay leaf, whole garam masala. Then add the finely chopped onion. Fry then till light brown. Then add the ginger and garlic paste. Slit green chiles..
  3. Then add the marinated chicken. Fry it for 5-8 min. Then add the almond and kaju paste. Keep stiring till oil starts coming out of the masala. Add the jaifal and javitri powder. Add little water and cover and let it cook for 5-8 min..
  4. Now add milk to the chicken. Now cover and cook it in low flame. Add salt and sugar. Also add the garam masala powder. Cook till the chicken is done..
  5. Now for the rice pre soak it. Now in a pan add ghee, then fry the kaju and kismis. Keep it aside. In the same pan add bay leaf and whole garam masala. Add the rice and fry it. Then add salt and sugar. Now add double the water which means 3 cup of water and 1 cup of milk. Add the green Chile. Let it cook till the water is dried and the rice is cooked.
  6. Now the layering. In a pan add a layer of rice then chicken with gravy, barista, kaju kisi and rose water again repeat the process. On the top add the kaju kisi and alo bhokara. Now cover it and cook it in very low flame for 10 min..
