- It’s 8 of fresh green chiles.
- You need 1 lb of sausage.
- You need 8 oz of cream cheese.
- You need 8 oz of monterey jack.cheese.
- You need 8 slice of bacon.

- Roast green chiles (I like to turn them in a little bit of oil on stove top, some like to roast in the oven, either one will work) until the skin falls off..
- Remove from skillet and peel remaining skin keeping the shape intact. Cut a slit down the length of the cooked chile, be careful not to cut through the bottom, to create a pocket. Remove seeds and set aside..
- In separate skillet, brown sausage..
- In a bowl, combine cooked sausage and cream cheese..
- Stuff the prepared chiles with the sausage mixture..
- Wrap each stuffed chile with a slice of bacon..
- Place the bacon wrapped stuffed chiles into a heated skillet and cook, turning them periodically until the bacon is fully cooked..
- Top with shredded monterey jack cheese and serve..
