Ingredients of Hyderabadi Chicken Dum Biriyani

  1. Take 2 cup of Basmati rice.
  2. Take 1/2 of chicken.
  3. Make ready as required of Whole spices (cinnamon clove, bay leaves, cardamom, mace).
  4. It’s Handful of Mint & coriander leaves.
  5. Prepare 1 of sliced onion.
  6. It’s 1 of chopped tomato.
  7. Make ready 1 tbsp of oil.
  8. Take 1 tsp of ginger garlic paste.
  9. Make ready as per taste of Salt.
  10. You need as required of Orange food color(optional).
  11. Prepare For of Marination-.
  12. It’s 1/4 cup of thick curd.
  13. Make ready 1 tbsp of chilli powder.
  14. It’s 1 tbsp of Biryani masala.
  15. Prepare 1 tbsp of ginger garlic paste.
  16. Make ready as per taste of Salt.
  17. You need 1/4 tsp of turmeric powder.
  18. You need 1 tsp of coriander powder.
  19. You need 1 tbsp of lemon juice.
  20. Take 2 tbsp of fried onions.
  21. You need 3 of slit ,green chillies.
  22. You need 2 tbsp of oil.

Hyderabadi Chicken Dum Biriyani step by step

  1. Wash,clean the chicken nicely. Then marinate the chicken with marination ingredients and keep it in fridge for 1 hour to over night..
  2. Soak the Basmati rice for 20 mins. In a big vessel, add 6 cups of water,1 tbsp oil,salt, few whole spices and let it boil well..
  3. Add Basmati rice, cook for only 60% and strain the water. Keep it aside..
  4. Meanwhile In a big heavy bottomed vessel, add 2 tbsp oil, 1 tbsp ghee, few whole spices,mint leaves,green chili and let it splutter..
  5. Then add sliced onion,1 tsp ginger garlic paste and saute for 3 mins. Add tomato and cook until it turns mushy..
  6. Mix the marinated once again and put the chicken in the vessel. Cook it for few mins on one side and another side for 4-5 mins..
  7. Spread the cooked basmati rice gently on top of the cooked chicken. Add little fried onions, finely chopped coriander and mint leaves, little orange food color water, or saffron milk(optional)..
  8. Sprinkle 3 tbsp rice cooked water on top and close the vessel without ant gap using aluminum foil or chapathi dough and close it with lid tightly..
  9. You can place a clean kitchen towel if you feel that air is coming out from the vessel as we need to cook in dum process..
  10. Cook the biriyani on medium to high flame on 15 mins and low flame on 20 mins. Switch off the flame and do not disturb for 10 mins. Then open the lid and mix gently,serve the tasty, hot Dum biriyani with raitha or gravy 😋😋.
