Ingredients of Spicy Stir-Fried Eggplant
- Take 3 of Eggplant.
- Prepare 100 ml of ※ Japanese soup stock.
- Prepare 4 of to 5 tablespoons ※ Soy sauce.
- Prepare 3 of to 4 tablespoons ※ Mirin.
- Prepare 1 tsp of ※ Chopped red chili pepper.
- Prepare 2 of to 3 tablespoons Vegetable oil.
- It’s 1 dash of Finely sliced green onion.
Spicy Stir-Fried Eggplant step by step
- Cut the eggplant lengthwise, make a diagonal cut in each skin, and do the same from opposite side. Then, cut them about 5 cm thick..
- Soak the eggplants from Step 1 in water for about 5 minutes to remove harshness. The eggplants tend to float, so put a plate on the top to fully soak the eggplant..
- Mix the ※ ingredients well. Drain the eggplants from Step 2 thoroughly..
- Heat a frying pan with oil, first cook the skin side of eggplants from Step 2 for about 3 minutes..
- Turn them around and add the ※ seasonings..
- Put the lid on and cook for about 10 minutes. Serve on a tray and sprinkle the finely chopped green onion..
